Had a neighbor who used to eat them once a week, grew up during the 30’s.talked us into trying them and their actually pretty good. Skin them like a rabbit starting in the middle of the back. Cook like squirrels. We found cooking the back legs in the oven after covering in shake & back works great. Don’t knock it till you try them, remember when everyone threw ling cod away as garbage fish. Maybe if people start to realize how good gophers taste they will have to set limits.

Yup, seriously here in Richman they are considered a delicacy.

Netflix has Meat Eater on it. In the first season they carry, Steve tries eating a coyote he shot on a Mexican hunt. He said he couldn't recommend the taste.

Iirc he said it tasted like somebody who didnt know how to cook duck had handed him duck, they also cooked it over an open fire with the skin and hair still on it so that probably didnt help

Just bear in mind that gophers can carry some pretty serious plague that can be transferred to someone eating them. I personally don't even like touching em let alone eating one.
