TB and anthrax are I believe limited to certain areas? I wouldn't be worried about this.
Just get to know the producer. Ask about drug withdrawal. Certain drugs have different withdrawal times. Ask about recent vaccines, medications and where the producer injects the animal. Most do it in the neck so look for and cvut out any scare tissue.
Young 2 yo animals are healthy. Cancer ,BSE,etc should not be an issue.
Hey if you read books by wildlife biologist on wild game like moose and all the stuff they can carry it will sicvken you from eating them. Beef should be way less risky than wild game.

Ok I have seen how people milk the cows. I have seen milking horses. I have seen milking camels. Goats. Sheeps. I have heard about milking cats(in a movie Meet the Fockers).... I have never heard about milking moose!

I've read about people in northern Russia (soviet union) who years ago rode moose. I was scared to post because I didn't think anyone would believe me.

Never heard of that! But riding a raindeers in a sled- that’s normal.
