Default Beer Batter recipe?

Anyone have a good beer battered fish recipe that they care to share? Looking to do some walleye up this weekend. Wife and one daughter aren't overly keen on fish so the normal "dust with seasoned flour and fry" isn't going to cut it.

Appreciate any good recipes. Thanks.

Some of the tastiest fish for me is cubing the fish and shaking the fish in a bag of of flour and some favourite spices. Beer battered fish is great too. For me, I usually buy a mix and substitute beer instead of water.

1 cup of flour
1/2 tsp baking powder
1/4 teaspoon salt
1 cup beer
Beat till smooth.

Simple but great.

For walleye, try this:

Mix:
Crushed cheese puffs or balls (you know, the really light cheesie things)
Lemon pepper

Put walleye fillets in egg wash, then batter in the cheese puff mix.
Fry in garlic butter. Add a squeeze of lemon to the fried fillets.

You'll love this.

I use this usally dry but is very good as a batter as well, use beer I/o water..

mix honey in with the egg wash. then bread and spice it how you normally would.

Just for some context, here is what I usually use. Just would like to try something different this time.

2 cups Bisquick
1 cup flour
1/2 T Black Pepper
1/2T Cayenne Pepper
1/2 T Onion Powder
1/2 T Italian Seasoning
1 T Garlic Powder
1 T Paprika
1 T fine salt

Mix ingredients and store in an air tight container. When ready to use, put some in a Ziploc bag. Add water moistened fillets and shake to coat. Fry in oil @ 340-350F on each side.

Mix makes about 3 cups which is enough for 2-3 fish fries for my immediate family of 5.

Perhaps some sort of Crispy fish sandwich would be appropriate for the ladies.

I am partial to a Panko Crusted Walleye Rueben sandwich.

But you could hid the fish in any popular sandwich that they both would enjoy.

Beer batter alone may be too close to normal/fishy to satisfy those taste buds

This is by far the best fish and chips I've ever had. It uses maple syrup in the batter and I think that's what kicks it up a notch. Wife is French and got it out of one of her recipe books. Had to link the google translate page for it.

I like the following:
1 cup flower
1/2 cup corn starch
2 tsp baking powder
garlic powder
pepper
seasoning salt to taste

add beer until it reaches the desired consistency (I like it right around beaten egg consistency)

Flour the fish, dip in the batter and place it in 375 F oil for 2-5 seconds until it starts to semi float by itself, then let it go. This will help prevent the fish from sticking to the basket. Also don't over crowd the pot too much, it cools the oil and you end up with a more oily product. Do some onion rings and fries up with it and you have yourself a winner!

Bass Pro and probably all the sports stores sell a beer batter pre mixed. 5 bucks and add the beer. As back up for wife and kid , bring along a porkchop or some chicken for them. Have fun.
Always tastes better deep fried then pan fried.

After you mix your batter let cool in the fridge for at least 20 minutes before coating your filets.
