You can see of outboard jet has any info on their site.
Can also call jet Doctor .
Can ask Dannon at Iron Aero, he has a website.
1200lbs dry then add fuel, gear then people and not to mention the weight of motor low to mid 300lbs at least. You are now pushing 2000lbs give or take.
I'm thinking not enough jam for boat to hp ratio.
I've been running smaller jets for a ton now and in a smaller boat it's always a dance between enough motor to get out of hole and on step then actually have enough speed to get you anywhere.
My current is about 800lbs with an etec 50 so 35 at the pump.
Goes ok with 2 guys at maybe 40k an hr, so no rocket.
90/65 may be good but I don't think by much.
Keep researching like your doing.
Ps make sure transom can take what you are doing, may need a beef up.
