Ablondigas Soup!
If you've never had it....you need to try it. Learn to make it, or in my case, have a wonderful wife who learned to make it. Traditional Mexican meatball soup. Lots of recipes online, but find one that uses fresh mint, parsley, oregano, and cilantro. Amazing! Probably my favorite soup ever, and having some tonight. Mmmmmmm!

Ooops! Did I spell it wrong? My Spanish isn't the best...anyway, I had to Google epazote, sounds perfect, but where do you find it fresh?
