I was at the Strathcona Farmers market of Saturday, they had some duck bacon......so I had to buy it to try. ANYTHING that says bacon has got to be good !

I was inspired and am getting ready to start the dry rub cure tonight. Will cure for seven days and then cold smoke with either maple or apple - have not decided yet. Will hopefully have some great bacon for Christmas morning. Thanks Dick.

I use to eat lotsa bacon but not kike this,made me darn hungry .Guess I will have give this a try,THANKS DICK AND MERRY XMAS

We'll have it a go and all I can say is WOW! I can't beileve I waited that long to do this. It's going to be tough to buy store bought now. Thanks fellas for the help with direction and recipe. 6lbs of fresh bacon and turned out wonderful. Can't wait to share with the fam jam Christmas morning.

I know this is about bacon, but I did some deer jerky last weekend and added maple sugar to the dry rub. Man was that good. Now next time I do bacon I will be adding that to the dry rub instead of the maple syrup soak the night before I smoke it.
There is some great looking bacon pics there. Making me want to go buy a slab and get to making some more. lol
