Default Chestnut roasting help

Received a bag of nice Italian Chestnuts tonite in trade for some sausage.

Any tried and true favorite preparation methods?

Score them and roast in the oven, carful not to over do them.

Default Chestnuts

Score them, boil l them then roast. Or skip the boiling but I think it helps plump them up a bit. Make sure you score them though, you've no doubt seen baked potatoes blowing up, these are the same but with a bit more oomph.

Bake with scored side down first-turn over after a bit they come out when you smell them. The trick is from the oven and wrap in a t-towel to cool down a bit.
When they are fresh and shell them they should come out clean no skin.

Myself I'm waiting for persimmons to ripen.

Default my method

cut an X on one side, place X down on a rack. In the oven or toaster oven roast/bake at 400 for 15 mins then turn them over individually for another 10mins. they come out perfect!! Rack height varies so I suggest you play around and find which works best for your stove/toaster oven

Brings me back to growing up and buying them from street vendors!

My grandmother roasted them in a cast iron pan, and so do I. Slice that X into the flat side of the chestnut - try not to slice into the nut, but through the thick skin directly under the shell.

Preheat your cast iron skillet to medium and put the nuts in - shake the pan every few minutes. The should be done when the X edges curl back and the chestnuts are a little charred. (But don't let them burn - ugh!) When they're done, wrap them up in a towel and let them sit for about 5-10 minutes. This will steam them a little and make them easier to peel. Yum!

Not tryin to get off-topic, but where do you get "raw" chestnuts these days?

I'd like to try that "roasting chestnuts" thing - especially over an open fire - but I don't know where to get them in Calgary.

I just remembered that Williams Sonoma sells chestnuts packed in syrup - have always wanted to try them, but never got around to it. I looked it up and there's a recipe for them - depending on how many chestnuts you have, this sounds like a sweet way to prepare them

Any Italian Market, but I believe my source said he got these at Scarpones

They are the cheapest...but if you want the best any of the Italian Markets have them (Scarpones, Linas, etc). I got them at Costco once years ago and they were amazing. The odd time superstore has them as well as other supermarkets but I find Linas are the best.

x2, we like to pour brandy or grappa over them after roasting. YUM!!
