Smoking Eggs in The Shell
I've been trying to get a bolder smoke flavour on my eggs, I've tried Alder and oak so far with so so results. Does anyone have a suggestion on how to get a bolder flavour?

Why smoke them in the Shell?
I’ve always done them shell off.
They take the smoke real well.

My sons boil eggs then use the smoker. Shell is taken off
They also scramble eggs, then put them raw into the pellet grill (in a pan) and smoke them until cooked
Shell on? Can’t see it working

Some use mesquite for smoking shell on eggs. Give diamond willow a try. Willow has a distinct great flavour.

I boiled them, peel then cold smoke them. Any event I bring them to they are the first food gone and a favourite at my wifes place of work. I make them alot.
I only give them 1-1,5 hours of smoke but it all depends how much smoke you want. Also, let them sit in the fridge for a while before eating, it lets the smoke flavor settle in and smooth out

Just trying to get a cleaner egg, even with the grill clean I end up with marks and I’m not too keen on pickled eggs with extra “stuff” on them.

Interesting project
I read on the smoking meat forum some guys wash store bought eggs in hot water for the smoke to take better, smoke at 200* for two hours or until they are brown enough, no need to pre boil the eggs they come out cooked and easy to peel.
I've never tried this might give it a go

I used to occasionally make Smoked Egg Salad in the hotel 25 years ago but was in bulk-Hotel Pan-Parchment-Royale-Short smoke til set.

After hot smoking ...Eggs should be put in an ice water bath until totally cold and the shell comes off easier. Also, don't use fresh eggs. Eggs a few days old peel easier too.

I tried some raw eggs smoked them for two hours at 200* then put them in cold water they were thoroughly cooked. I might have tried to peel them before they were completely cold the shells did stick and were not easy to peel.
The smoke did take I could taste the hickory however I have better luck boiling the eggs in an instant pot then cold smoking the eggs for an hour.
