I grew up on Orchards in New Zealand, the old man had several ha in golden queen peaches, pears and plums, as well as an expermantly Block, with Black Boy peaches, honey dew apricots, etc,
we used "quince" as a root stock to, graft too, and would normally graft 3 buds, and see how it looked, next winter.
Not sure what root stock is used in Canada,
