Willow smoked cold water whitefish & pike
open fire Chinook salmon, preferably within an hour of catching it.
open fire cold water Brookies within a few minutes of catching them.
Walleye and perch

Fresh Yellowfin Tuna, grilled rare steaks and tuna carpaccio.
Sword fish.
I like all fish a lot but those ones really stood out.

Freshwater? Hard to beat Largemouth Bass, I prefer it over walleye!
Saltwater? My fave is fresh caught Pacific Ling Cod.

and that is including saltwater! but mahi mahi/dorado/dolphin is a close third.

I think you meant walleye. You don't find 'pickerel' out west here.

I know I used to call them pickerel too back when I was a kid but a friend of mine, who's a biologist who works mainly with fish straightened me out a couple decades back and I haven't called them that since.

Make mine Sablefish (Black Cod) and Lingcod. I would trade three Salmon for one Sablefish any day.
Sablefish are sometimes, but not often, caught when targeting Halibut.
Awesome flavor and texture.

Perch mainly with a small dash of Walleye! Very cautious now on Pacific Ocean Fukushima tainted fish & seafood, that scares the bajeebers out of me now though I miss it So! Just don't want to be eating any Strontium 90! Although it's been awhile, I agree with some earlier posts that a good fish fry of Crappie is also hard to beat out of good cold shield water.

Salt water - Chilean sea bass , sablefish , wahoo , triggerfish , hali , chinook.
Fresh - any cold water white flesh or cold water red flesh trout.

I was waiting for this one. Yes fresh crappie with a slightly spicy batter, still crave them every spring. Used to bing on them every spring back in Ontario.

i just experienced fresh yellow fin we caught in mexico and wow was that amzing. glad a brought allot home. marlin is also very good and i really have a liking for atlantic cod.

I'd have to separate this into 3 categories because they're all so good I can't really pick a favourite.
Warm water: Perch
Colder water (trout): Bull trout
Salt water: Stripped Marlin done on a charcoal BBQ with some salt and Cajun seasoning

3 that stand out
1 arctic char fresh from the ocean on king William island. we would drop the fish in the sink and our camp cook would prepare them amazing fish
2 fire blackened walleye on La Ronge cooked over open fire by my grandfather
3 Wollaston lake northern stripped of y bones and cooked in foil over open fire
honorable mention - this past summer at Tatuk Lake was Kokanee cooked by grandson over open fire. amazing
