X2 on going fishing.
For a couple bucks you can reserve a 45 minute tour of the Canadian Mint in Winnipeg. Probably some good deals on coins right there.

Grand beach

Manitoba museum and planitarium. Check out the little stores and antique shops downtown. Visit the original princess auto. River cruise.
Be super vigilant, don't leave valuables in your car, lock your hotel room, mind your businus. Always have your passenger doors locked when driving.

Go check out the Museum for Human Rights. Even if the content is a bit heavy the building is out of this world.
Also second hitting up the Forks, eating at a Sals, and checking out the mint too.
Don't bother with downtown otherwise unless you like filth and utter degenerates everywhere or want to experience a "Winnipeg Handshake".

Insect Repellent
Bring lots as the bugs can be ferocious and plentiful. They were spraying in city limits when I lived there but the NIMBY's were trying to stop that.

Lower Fort Garry. Big museum about the fort built by Hudson Bay Co in 1830. Treaty #1 was signed there.

I also recommend doing some fishing on the Red River north of Lockport. Big Channel Cats among other species.
Gondola Pizza is quite good, one of if not my favorite pizza shop. I like the thin crust.
The Forks is a nice place, if the walkway isn't flooded.
I'm not a baseball fan, but apparently the Winnipeg Goldeyes are entertaining to watch.
Assiniboine Park. Nice big park with lots of open areas, walking and biking paths (also good for rollerblading). Have a picnic there.
Winnipeg Blue Bombers - catch a football game at their new stadium.
Head north to Grand Beach, Gimli, or Hecla Island.
Go east to the Whiteshell or Northern Ontario and do some fishing (~ 1.5 to 2 hours)
Take a walk in Osborne Village or Corydon Avenue - somewhat akin to 17th Ave here in Calgary. Lots of little restaurants, ice cream shops, etc.

Well there's a hundred thousand places to fish but if you're just in Winnipeg shore fishing I would go to Lockport or Selkirk

When I lived there, we always enjoyed Assiniboine Park, and make sure to check out the legislature building, do the tour. Also, Hecla Island is a great day trip. I almost hit the biggest moose I've ever seen in my life there! Would have destroyed my truck !

Many here have covered a lot of good things to check out. I will add that if you do go down to Lockport, save yourself some frustration and either rent a boat or do a guide.
Fishing from shore is brutal as the snags are constant. There is so much tackle among other things along shore. It can also get quite crowded too. If shore is the only option, head a little further north into a Selkirk. Still great cats but less headaches.
Out of the many suggestions, I'd say the Forks and Assiniboine park are great so a summer afternoon walk. The zoo here is also right inside Assiniboine park of that's of any interest. It'd not as good as the Calgary zoo but they have made lots of nice improvements.
One last place to add would be Fort Whyte. It's right on the edge of town and is great for a stroll. Lots of wildlife to see.

Wrong side of the locks. I never understood the compulsion to fish the bottom. Geez Louise

I know from first hand experience you can fish right from shore within city limits on BOTH the Assiniboine and the Red and catch lots of fish of many different species.
Cats, walleye, goldeye, bass, etc.
If your pressed for time you don't need to go all the way to lockport...great fishing right in town.
Bring a can of Off though!
