I would not recommend Cutting Block for sausage. We had a whole deer made into a few different kinds of sausage and threw it all in the garbage. They are good for cutting and wrapping game though.
I would not recommend Pincher Creek Meats. I took a mule deer there 3 years ago and somehow they managed to get shards of bone in every single package of ground. I understand there can be the odd piece here and there but never had it that bad before.
Also, when they cut and wrapped steaks, they left on a very thick layer of fat. This seemed strange to me for wild game...
Since then, I have been using Bear Butchering north of Lundbreck. I have not tried their sausages but they do a good job with cut & wrap.

x2 on Bear Buthering. Their sausages are great flavor.. Very clean shop..
