Default Hanging Deer

Hey y'all, just wondering with the right temperature, how long do you let your deer hang? If they are any actual butchers, your opinion would be greatly appreciated!

Anywhere from 0 to 3 degrees.

Controlling the humidity is key, and without a cooler, it's tough to maintain the correct humidity.

Given the humidity issues, hanging for anything over 3 days usually results in wasted meat due to the outer skin drying up.

Ideally if you can get humidity control, a week is all you really need to hang a deer.

Used to hang for a couple days but then always had to deal with outer meat drying. Now i usually debone same day or next day if I get home late. Havent noticed any difference in quality of meat.

My family has always let the moose and deer hang overnight (24hrs). Usually at around -2 to 2 degrees celcius.

I always process my game as soon as possible, never tasted any different than friends game that has been 'aged'. Another plus to processing right away is not having to contend with meat loss to drying out, mild,dirt or dust contamination and the like.

I leave the hide on to prevent the outer skin drying. Set up a fan and have left it having for over a week at 2-4* . You just have to watch the front leg pits though.

I have never hung my deer never really understood the need to. My meat has always been tender and tasty and My wife loves it. My buddy use to hang his deer and his wife hated the meat, then she tried mine and like it (both deer taken from the same farm), as a result my buddy doesn't hang his deer anymore and his wife likes the meat now......
