Default building a small walk in cooler for aging meat. need help

I want to build a small portable walk in cooler out of wood. thinking around 6x8x6 would do the trick. have a couple early season hunts that we would drag it to camp on a trailer. could also use it in the yard when we get back until meat can be butchered. was wondering how I should rig it up. got lots of extra wood lying around so would want to build it out of that. wondering if a couple small air conditioning units on thermostats and a bathroom style fan set up on a humidity thermostat would do the trick. anyone else build something like this?
