Default Butcher question

Hi all

I took in two white tail bucks on Dec 5 of this year to be processed into sausage and jerky.
Well it's August 12 and still no sausage and jerky!!
The butcher gives excuse after excuse.
I put a $50 deposit on each deer, Is there anywhere a guy can call and get this butcher in a heap of trouble?
Any advise on this would be great!

I had a similar experience with The Butcher's Bus, took my meat in November and had to call a few times to get it back September... crazy... not sure I even got my meat back

I’m actually very surprised butchers can even take wild game without proof of CWD results. I’d be quite Leary of getting other peoples meat after 6 months to a year and who knows what it might have.

Report to better Business burial.
Freezer burn unless it was vacuum packed .

Right here. Post the name so this community doesn't ever use them.

Put it on Facebook too.

There's far too many of these kinds of operations....they don't deserve a penny.

Report it to fish and wildlife, wanton waste is a crime.
They won’t be able to do anything about it but it’ll result in a visit from them.

Lol butcher bus i took a full moose in and a couple months later got 3 small boxes of meat back.

Deer hanging by the hooks outside his house with a cat chewing on the frozen hinds should have been my first clue. It went downhill from there. Search function is your friend.

Probably dine like a king with what people bring him , leaving scraps for the hunter to take home .

I know a shop like that. You drop off your game and he just sets it out on the ground until he has room to get it hanging and skinned etc… would never take my personal stuff to him! Have seen a dozen critters sitting in the dirt before.

A few years ago we got two moose the first week of October. We had planned on being in camp for 9 days but had to leave after 5 as it was getting too warm. The place where I usually take my moose said they were full.

It was 3:00pm on a Saturday afternoon and I’m driving down the hiway phoning all over trying to find someplace to hang our meat. My truck was showing 27C.

Finally found a place to hang them but when we pulled up the dumpster outside was overflowing with guts and animal parts.

Unloaded the meat and they seemed to do a good job of cutting and wrapping but the stench of the maggot infested dumpster outside took awhile to get out of my nostrils.

Well chances are your not getting your meat back or at least not yours and to the amount you dropped off so go in and ask for the equivalent in pork/beef etc
Then come back here and let us all know who was the scum bag so no one else gets taken for a ride too.

Had this happen once in Saskatchewan.....funny this place closed under a year....word of mouth spread quickly Imagine now with social media

I’m thankful that we butcher our own. When I lived in McMurray my buddy cooked some ground meat up from a moose he had butchered at premium meats in Thickwood. He and the misses sitting at the table and he goes to bite in, cracked his tooth on a little piece of lead. Problem was he arrowed that moose! Lol

There are two professions in this world I don’t trust. Butchers and politicians. Lawyers are a close third but they end up being politicians usually so there ya go…

Most likely. His yard looked like that one on Hwy 16 on the east bound side close to Chip Lake if anyone is familiar with it.

This is why I process my own meat and make my own sausage. For basically the same price or less than what you'd pay to get it done year after year you can control what you get and when you get it. Probably takes about the same amount of time it does to drop off and pick up from a butcher.

Unless you got a awesome butcher who has a turn around time within a week....we do here called Hamels in Cold Lake....I take my cleaned cuts there for the very best smokies and burger bar none.....plus I can’t just simply walk out without buying more....

The only way you know what happens to your meat, and if it is in fact your meat, is DO IT YOURSELF.

My first few animals didn't look pretty and professional in the packages, but with help from the internet and a decent work space, I now manage good results.

Butchering is part of the process. If you can't deal with it, don't shoot it!!

Years ago a buddy of mine shot a cow elk. We had a little sausage made. When we went to eat the sausage there were chunks of plastic in it. We questioned the outfit in spruce grove that made it and they said “ oh ya, we forgot a spatula in the grinder”. Haven’t been back since.

Have no answers folks. Good Butcher is like a good Doctor. Can you trust them with your life? Think about it. Either one can kill you. Only advice I can give is ask a lot of questions. Can you see the processing area from the foyer? Smell clean? Busy is good. Refrigeration out of the shop?(not so good) Etc, etc ask and research. Any customer of ours when we did game never had a doubt. Anyone that want's to research a shop the info is out there.

We generally do up our own. Been around the block of getting twigs and dirt or leaves in our packages years ago from our meat that was dropped off pristine clean. We skin first, wipe it down checking for hair then gut so no leaves, dirt, twigs. Been there, done that, bought the T shirt. Won't go back. I'm not a pro but I can sort out a few steaks, roast, stew and grind pile - debone everything. Best thing we did was get a food saver. Beats the tar out of fighting with tape and wrap!
We also started making our own sausage. Once set up I was surprised how easy it was - admittedly we aren't doing fancy stuff just basic smokies, breakfast sausage, pepperoni sticks and such. Years ago my Dad took some of his moose to a local place for sausage. Seriously it was so bad his dog wouldn't eat it. Chalk it up to lesson learned right. Well not so fast. The place sold so Dad decided to give the new guy a try ...... the new guy bought the place recipes and all lol. Another batch of terrible sausage! The place closed down a few years ago.

I think I posted my story before but here's a rundown. Brought an elk to a spruce grove butcher. Never got a call back. After getting F&W involved they couldn't get the CC info with out RCMP help. So RCMP get the CC info from the butcher for the person that picked up my elk. About a year later was told that because there was no ill intent from the butcher there was nothing they could do. Lesson learned and never gone back

And at the beginning of this ordeal I was offered a choice of 2 other elk that were not picked up at that butcher. Didn't take them up on the offer.

At this point OP take it as a lesson learned. As other people have said, who know what you would get back.

If you’re in the Calgary area look up Elevated Butchering - he’ll come to your house, cut and package while you wait. Ray is a great guy and Journeyman butcher. I don’t think he’ll process into sausage or jerky for you but you’ll have your animal done fast with no doubt about someone else’s sneaking into your freezer.
