Bacon jam.
I don't have the guts to try this but if you do, please let me know how it tastes.
Bacon jam
2 lbs sliced bacon
1 medium onion
4 cloves of garlic
1/2 cup brown sugar
1/2 cup vinegar
1/4 cup maple syrup
1/2 cup strong black coffee (I used an eppresso shot)
1 teaspoon black pepper.
Cut the bacon into 1" strips and fry in batches till brown and very crisp. Pour off rendered oil and save for another use. Place browned bacon in a bowl.
Use a little of the retained fat to fry the onion and garlic. Once browned, add the sugar, vinegar, syrup, coffee and pepper. Mix, bring to a boil, then return the browned bacon to the boiling mix. Cover and turn down to a very low simmer for 2 hours. Some, but not all of the liquid should have boiled away in that time. Turn off the stove and allow the mix to cool.
Purree the bacon mix in a food processor for 30-60 seconds, till you get a fine even blend the thickness of thin peanut butter. Add a bit of water if it's too thick to spoon. You want it thick enough to be a spread but not so wet it's runny.

LOL what a coincidence! I just took a cooking class last night and Bacon Jam was one of the condiments we learned. We had it on scallops, but you can put it on all kinds of things apparently. It's great. It tastes like breakfast! bacon... coffee...

Hey Oko: Do you think a little bit of that bacon jam would go good with wild meat, or is the bacon taste too overpowering?
Any other neat bacon recipes in that cooking class of yours?

I make it annually and can it in small jars so it keeps. My recipe is a hybrid of the one you provided and I have added dried figs cut up small and also Whisky. The first version I made I used a nice scotch and found that a little overbearing. Next time out I tried a pale cognac I had and it was fabulous.
As others have said a little on a seared scallop is great , another way really like it is I made little sliders. I took nice buns and dipped the first 1/2 inch of the cut sides into an egg wash and browned them slightly in a frying pan. Then a nice smear of whisky bacon jam, a perfectly poached egg and a slice of gruyere. cheese.

I think it might go with lots of things. Chef said he liked it on burgers, toast...
As for other bacon recipes? hmmmm last night did make a really good meatloaf draped in bacon to add extra flavour and moisture. Some bacon in the quiche... it was a "retro" foods night, so lots of bacon, cream, nothing diet! LOL Actually first time I've been to this place. Was fun. Definitely do again.

I've made it before.... it's more like a sweet tasting bacon relish than jam. Very tasty on burgers, crackers, etc.

Bacon
So as I wait for the dog to get released from the vets. She received a nasty gash to the front leg while bird hunting this morning " sucks ". I decided to try this as it's sounded to good to be a joke. I now have it simmering and WOW! Smells too good to be true. Neighbours are starting to look out their windows, dogs are barking, Magpies are sworming. Should have made a double batch

All the talk about it set my mouth to watering so I took my second to last jar of mine and had it on top of seared scallops with a side of fiddle heads and parmesan.

I had bacon jam once. I thought it was a medical term though. From trying to eat too much bacon at once.
Now I have to stop at the grocery store on the way home and see if I can get bacon jam again.
