Default Goose Sausage - What kinds are you guys making?

I have a bunch of geese that I am going to be making into sausage for the boys. Just wondering what you sausagemakers are enjoying?

My favorite sausage that I have been enjoying for the past couple of years has been Omega 50's Mennonite Farmer's Sausage. Dead simple and seriously delicious. I am wondering how it would be with goose/pork, as I have only been making it with straight pork.

Any recipes you want to share would be beneficial for lots of guys.

I was hoping to a do a bit of summer sausage as well as a batch of honey garlic but the geese just aren't co-operating this year. I'm 3 or 4 geese shy of my first batch and I doubt you will taste the goose if I just substitute more pork. The honey garlic will just have to be deer this year I guess.
I'm not willing to share my recipes but the spice mixes from Halford's are pretty good if you can still get them at this time of the year.

Pepperoni sticks from Rockys Sausage Haus ! Excellent. Goose and Duck mixed with pork.

I get swiss bacon smokies made from Rocky's with my goose and duck, and it is great. I may try pepperoni sticks this year too.

Sorry can't help with the recipe.
