Need help on cooking Grouse
Out where I moose hunt there also a lot of grouse. I haven't been taking any of them because I'm not good at cooking them, so I need some help.
I have a good propane cook stove, a small propane grill, some pots and large cast iron skillet with a lid.
So I'd like some good recipes for out in the woods that will hopefully be rather simple.

For fresh birds just toss them cubed up into the pan with some butter and onion!

X2. I also like to give them a shot of hys seasoning salt and then add a can of mushroom soup.

4 cups water
1/5 cup kosher salt
Mix and brine the breasts overnight and grill just like chicken breast.
Wont be able to eat grouse the first day, but all days after that!
Brining is the most underrated cooking trick in the book. Always have tender moist meat!

What kind of grouse?
Ruffies are just chicken with character, so cook like it.
For spruce (the challenging one) I mix spice and sweet. Often I'll dust them with lots of dried mustard (wasabi would be cool too) and then add red current jelly and a little stock. Could get really fancy and use red wine, brandy or port too. Now I'm thinking, and an orange sauce with scotch would be tasty.
When I'm back somewhere far, I usually just rub some salt and pepper, do them on the fire and let that forest funk sing in my hungry mouth.
Dang!

Grouse
Dip grouse breast pieces ( cut breast in half lengthwise, remove inner fillet and use), in some busted up eggs. Then roll in flour , or better yet, crushed soup crackers seasoned with ( garlic powder, onion Powder, pepper, lawrys salt). Then fry in LOTS of Margarine !!! Don't over cook it, chicken cooks fast! Chicken strips deluxe! Dipping sauce optional!

Yup first tried this with bacon wrapped shartail that Oldgutpile made for us - WOW!!
We have since done it with everything from chukars to Spruce hens!

This is honestly one of the easiest marinades you can do for anything from a Spruce hen to a cow. We did a wild boar roast then slow on the bbq at the lake last year. Was great!

An easy way to do any Grouse breast is to take the meat, flatten it out like a paddy. Then put a stick through it like a marshmallow and roast that over the fire.
You can add any seasoning you want/have handy to it. Dried, crushed juniper berries in a coating of Bear lard is great! You may as well use some salt and pepper too if you have it handy but not necessary.

X2 on the overnight soak for spruce hens. I've used milk, butter milk, salt water, salad dressing...all good. Typically I simmer in a mix of butter or bacon grease and BBQ sauce, add some black pepper, turns out very similar to deer.
Or simmer in a mix of orange juice, fresh ginger and sweet chili sauce (go-to recipe for duck as well)
They do NOT do well with breeding/batter imo.

we used to wrap them up in tin foil with onions your favorite spice and butter and throw it into the hot coals of the campfire also it made for a easy clean up .

Here's a nice one from this last year. Flatten breast. Wrap a nice hard cheese (smoked cheddar) with the breast meat. Sprinkle with herbs and some salt (sage or thyme) then wrap that in bacon and stick on a skewer over the fire or in a pan with butter. Do not overcook yum!

Grouse Burgers
With three teens hunting now we ate a lot of grouse this fall. We ve been grinding the breast then making patties....phenomenal eating
4 grouse breasts ground fine
1/2 cup oatmeal or bread crumbs
2 eggs
favorite seasonings
mix up and form into patties
Best chicken burgers ever

Pressure cooker
Remove insides. Boil water place grouse in for 1min (makes easier to remove feathers) Remove feathers place,cleaned grouse,place breast in pressure cooker with ginger, soy sauce and green onions for 20min. Enjoy 😊

Breast it. Cube it. Fry in garlic butter. Salt pepper to taste. Doesn't get much easier

Cube it up, wrap the cubes in bacon and put it onto skewers, BBQ it and you're laughing. It's so good!!

Cubed and cooked in cast iron pan with onions, garlic and a good shot of butter. Turn heat low-Toss in a 8oz stick of Cream Cheese and a 1/4 cup of salsa till all melty and thick- Cover and Warm some Tortillas on top of the lid. Once they are warm and pliable scoop some Grouse filling on/in and roll to make some hot tasty cheesy burritos.
If too thick-can be thinned with a small splash from a can of beer.
Can of Beans thrown in optional but tasty and filling

I tried cooking them for the first time this year with the cream of mushroom soup idea.
Not trying to hijack the thread but although the taste wasn't bad they were very tough, I cooked three and one of them was so tough you almost couldnt cut it with a knife, the other two were manageable. Do you guys think I over cooked them or something to cause this or are grouse normally like that? They were ruffies by the way.
