The best $50 knife or the best $500 knife? Big difference lol. I've got a $60 Kershaw that I like and a $50 Rapala (Finland) that I also like....but I also don't clean hundreds of fish a year.

You need to clarify the budget and intended use.

This guy has a ton of fish cleaning videos and he basically uses a skinning to do them all.

Pretty slick.

I use a cheap Rapalla but I live in Alberta where keeping a fish is about as rare a Stanley cup run south of Red deer. 😈

Vince may have a lot of video's but fish would spoil before he got a shore lunch together. 2 knives, scaling, removing the head...really?
A sharp 6" fillet knife will handle most fish your going to fill-it.

Showing a step by step how to always is a slow process, compared to the reality of doing the job.
All I am suggesting is, there is more than one way to skin a cat as a they say

For cheap(er) knives, Victory knives from new zealand are nice. They have different stiffnesses/lengths.

As much as a gear snob as I am - the true answer is the filet knife that's your sharpest ....

I keep going back to Old Rapala (Finland made with gray blade) and it holds an edge long enough but is still easy to sharpen back up.

The steel is softer compared to some of higher priced knives I have, but it gets sharp, and does the job. And, let's be honest, when you are out on a trip, and you need to touch up your knife, not having to be careful sharpening or taking a long time to do it makes sense. It's a tool.

agreed. I think I paid 11$ for my Rapala back in the day and I don't use it near as much as I'd like, but it does the job well, is easy to get a quick edge on and if I accidently knick the blade, I'm not freaking out. Had someone take a swat at a hornet last summer while I was filleting some whitefish and hit the knife right out of my hand. Put the tip of the blade into the ground an inch or two from my foot. Quick touch up and I went back to work.

I have two old Uncle Henry’s.
Great fillet knives.
You could probably keep an eye on Kijiji or market place and pick one up cheap.
I don’t know if the newer ones are as good of quality.

I use an old grey handled Buck folder. Cleaned 1000's of fish with it. No butcher knife or 14" kitchen knives in my kit. It sharpens up nicely and folds away compactly for storage

Got a Cutco fillet knife in 1981 when I was up in Alaska.

All I ever needed then and now.

Use it on big game too.

Crazy sharp, keeps an edge, easy to sharpen and IF you ever have an issue they will take care of it.

Might be worth looking at.

Any fans of electric knives? I got one as a gift, probably was on sale, cheaper model. Awkward handling so learning still how to hold it better, but certainly saves time when you need to do quick cuts for smoking. Granted, I only tried it on whitefish so far, will see how it goes with pike and walleye.

Don't think there is one on the market which would be able to tow my boat from Calgary to Forks and back on one charge

The best fillet knife I ever found was an old Ruko. It was amazing but they don't make them the same anymore.

This guy likes the Rapala and he ot to know.

dexter fillet knives will probably be the best value knife imo.
higher end brands may hold a better edge. But if you know how to sharpen a knife. Any budget blade will work.

I brought 2 Dexter's with the white handles to the lodge I worked at last year. By far everyone cleaning fish tended to prefer them over all the other knives we had.

I picked up the cabelas lithium and love it for lake whites, pike, walleye even the grocery store coho salmon, easily cleaned over 100 fish last year with it and still works like new

I have a cutco that I have used for 35 years. I also have about 3 other knives that I bought when I had forgot my cutco. They all work but you do need to sharpen them (I sometimes forget that).

I must say… I do

LOVE MY HAVALON!!!!

https://www.amazon.ca/Havalon-Talon-.../dp/B07B33GXYH

Took me a bit to get used to the ridiculously sharp blade, once you get onto it, there’s no going back

However, I must add, I butterfly all Amy pikes and walleye.

Ocean fish tho gonna be different. Need a big gnarly cimiter and blow thru the ribs for salmon, lings and rockfish.

https://williamsfoodequipment.com/vi...x-handle-40632

All depends on if you need finesse or you manhandling

Being that I will clean at most 30 or so fish per year here n Alberta, I just bought a Rapala on sale for $15 this morning. If I cleaned a lot of fish, I might look at something better.
