Help with potential bad deer meat please!
Hi all,
I was lucky this morning in 337 to shoot a nice buck. Bullet entry was behind the front solder, broke the first 2 ribs counting from the back and stopped in the opposite front shoulder. It touched one lung but didn't touch the liver. We gut it in the field and bright it home. My wife wanted to prepare a nice liver supper but she notice something different.
There is a brownish to black blurry liquid that is poring from the liver (I was expecting to see red blood) and it smells like a deer shoot in plain guts.
Meat looks good and healthy.
I have attached some pictures for your reference.
Any suggestions will be helpful.

if you don't trust the liver get rid of it and have a backstrap instead

I'd be worried about something like liver flukes. I don't think it really affects the animal or the meat, other than the liver...I know you don't want to eat contaminated liver.
I know there are tons of other things that can make a deer sick, but that's the only thing I know of that messes with the liver. I remember they (liver flukes) looked like a flattened gray worm in the liver. Hopefully someone that knows a lot more about deer will speak up

The meat will be fine....
Some bucks are getting rutty and this can really turn the liver into something inedible.
Experienced the same thing just two days ago with a whitetail. He was already very musky smelling, tarsal glands were potent. The liver was off color and stunk! I won't even feed it to the dog, I am not going to deal with that smell.....
The meat is fantastic..... This is not the first time I've seen this.....

They look like small holes through the muscles, similar with worm holes although I haven't seen any worms or any similar with a parasite.

Look like blood vessels to me. Are they cuts from the hind quarter?

They are everywhere, back straps, hind quarter and liver as well.

Absolutely. Those are blood vessels.
Fresh venison loin steaks = Cure for paranoia.

If the liver is suspicious I just wouldn't eat it.
The meat looks fine and I would not worry about it.

Way too much paranoia here...
As WB says, those are just blood vessels. Perfectly normal.
Just processed my son's deer today, and have done many deer over the course of my hunting career. Those are perfectly normal 'holes'. If you had posted this last night, I could have posted similar pictures from our deer.
Eat away... that should be a good tasting one!

There is actually a good explanation to what you've just described...I've always refered to it as "lover's liver". This happens to a male when in rut. He quits spending so much time feeding and far more time pursuing the opposite sex in many different fashions. It is very taxing on his body and because of this, he begins to burn fat...lots of it. So much so, that his liver turns a white-ish/orange/brown colour because of the amount of fat being processed through it.
The holes you see in the meat are simply veins. That meat looks so darn good, I darn near started licking my screen.
