Do tie them by the back feet, not by the tendons. By the tendons makes them very difficult to open.

Also, don't wait until they thaw out to sell. As AlbertaAl set, sell them while they are fresh.

And hanging in the shade away from mice is critical, in a building is better than outside in the far south with its chinooks.
