We like to do our own deboning, cutting, wrapping etc., setting aside the trim to take to a good butcher for sausage.
I have some friends who make their own sausage, so at some point they will convert me and I'll get into it too. Incredigirl isn't a fan of the idea, but she'll come around.
It's great when we have the time. The process is very satisfying.
Gotta get the kids involved this coming season, it should go quicker.
