I would get the 8. May seem large, but remember that the working capacity is only about 2/3 of that 8 quarts IIRC
The novelty has not worn off at all. We are 2 people and have the 8 quart.
Just don't focus on how fast it cooks because the reality is that the short cooking times starts only after it comes to pressure and it takes time to release the pressure safely.
My Instant Pot corn on the cob only cooks 1-2 minutes, but total time is closer to 20-25 minutes with release-so would be quicker in an open pot.
