What a great garage sale find! The engraving technique is called 'Aquatint', because the complicated process produces a print that looks similar to a watercolour. Many were then hand coloured with water paints. The master engraver that produced Audubon's famous illustrations in 'Birds of America' used the aquatint technique. Probably the best sporting dog artist using this technique was R. Ward Binks 1880 - 1950, who did fantastic dog portraits for royalty & the rich & famous around the world. Google Images has lots of his work.

The artist and publishing house should be in tiny letters in the bottom right border of your engraving. Probably done in England.
