The Motueka river nelson is one of the most productive brown trout fishery's in the country, med sized fish only, the Wangapeka, flows into the Motueka is a stunning back country fishery,

Head of the Buller, Gowen and Nelson lakes, around top house, all a good spot for a fish, try a boyant dry in the head of the Buller, and a nymph 18" on a dropper of a humpy or cicada. fish the fast water and pockets.
Lots of good fly fishing options around Murchision and Inagahua.

Heaps of fishing options down south, look for any river flowing into the lakes and a Cicada worked around the lake edges will normally bring a fish or two, make sure to work the cicada in, as the leave a real wake while struggling to get to land.

Stop in to any sports fishing shops for advise, and ask for Fish and game pamphlets, that give river info, for local area. or pick up a Spot X book on fresh water.
Biggest brown trout in NZ, are in the Tekapo/Twizel canals, have a fish here with your fly rod, you never know, the big fish are feeding on other fish, but I've got a few salmon and trout on nymphs to 7-8lb, so good fun.
I recommend you pick up a few tungsten nymphs to help getting deep enough,
