I've bought and sold lots of bikes and never let anyone test drive any of them. If they had a problem with that, there were always others that didn't.
I've only ever test rode one bike I've bought but it was a POS that I ended up buying for $400 and restoring to sell. I don't think the seller was overly concerned I was gonna wreck it or take off on it with my bike sitting on his driveway.
As others have said, I'd let them test ride it if they were to leave me the asking price in cash when they went for a ride.
