Likely an allergic reaction to a component of the vaccine or one of the excipients. Unfortunately allergic reactions are completely unpredictable. That is the main reason people are advised to wait in the clinic for 15-30 minutes after a vaccine.

Scary stuff for sure, but USUALLY, if recognized and treated promptly, there will be no long term consequences other than a day in the hospital.

Regarding the association between GBS and vaccines, the last I heard is that we are still unsure of any causality. The problem is that GBS is so rare and vaccines are so common, it's really hard to tease the association apart. THe good news about GBS is that it usually resolves, though a slowly ascending paralysis would be pretty terrifying.
