OIL.
Once its done..a coat every year or two will keep it looking great foreever.
Varnish will yellow...crack and start flaking.
I use boiled linseed on military stocks, tung or walnut oil on the rest.
About 20 coats all together...wet sanded wth 600 grit at least twice during the process.
