What's your favorite wood for smokeing ?

I do most of my beef jerky with misquite and have tried apple on Salmon. I have Heard that willow is very good but never tried it. Got some cherry when I trimed my Evans cherry tree that I gotta try yet. When it was green it smelled like cherry brandy.

What is your favorite ?
